Even with hisrecent comeback tour,Garth Brooksmanages to keep pretty quiet. But wifeTrisha Yearwoodis spilling one of his secrets: The country singer loves tortellini.
While playing hostess at the Down-Home Country Brunch during the New York City Wine & Food Festival, Yearwood served up acountry quichethat featured ground pork sausage with sage, tomatoes, cheddar cheese … and cheese tortellini. Why the Italian addition?
“That’s my husband,” the country star told PEOPLE. “It’s almost a joke in our family, because he’ll come along with any dish and be like, ‘Why don’t you add tortellini to that?'”
Initially with the quiche, “I thought it wasn’t a good idea,” Yearwood said. “But I made one with and one without … and the one with was so much better. So he was right about that.”
That’s in part the thinking behind herupcoming cookbook, her third, which “is more of a reflection of howI really eat,” she explained. “I haven’t given up anything. I do all the comfort food I love, but in moderation. This book, which will hit shelves April 7, is more of a balance between those kinds of recipes and recipes that are maybe rich but come with substitutions, things to make them lighter. I’m excited about the combination of recipes in the book.”
And while she’s excited to carry on with cookbooks — and her Food Network seriesTrisha’s Southern Kitchen —Yearwood is definitely not excited about the prospect of opening a restaurant.
“What I love about cooking is something I wouldn’t love if I owned a restaurant,” she said. “If you’re a person who’s a perfectionist like me, you’d have to be there all the time. I’m afraid it would make me not love to cook, and I don’t want that! Never say never … but I don’t think I’ll be doing that any time soon.”
